Only the best of Taggiasca olives: the Riserva Taggiasca Extra Virgin Olive Oil for sale on our website is produced every year in limited quantities, obtained by carefully selecting the best Taggiasca olives – harvested still green or just ripening – during the months November and December in our centuries-old family plots located between 300 and 400 meters above sea level.
As with all the other products coming from our mill in Dolcedo, the recovery of traditional methods and genuine taste has a place of honour in the production process: the olives are harvested by hand-beating and cold-milled within the day, slightly earlier than complete maturation to preserve the highest organoleptic qualities at their best. The production as a whole contributes to give this olive nectar the characteristic green colour with yellow reflections, the fruity aroma and the sweet taste that ends in a balanced hint of bitterness and spicy typical of the greener olives.
All of our bottles feature dark glass to preserve intact the qualities of the product and bring it to the table just as freshly made.
