Our olives come from the gentle valleys of Dolcedo, touched by the sun and the sea breeze, where the San Martino Mill carries on its olive mill tradition preserving those ancient techniques that have made the extra virgin olive oil from the Taggiasca variety a unique product in its kind for quality and value: here, the sweet Taggiasca olives are harvested exclusively by manual beating from mid-November to the end of February, then cold ground within the same day in the mill with granite grindstones.
This ancient, slow and delicate process respects the organoleptic qualities of the product giving the extra virgin olive oil for sale on our website the typical light fruity aroma, with notes of almond and pine nuts, with an intense yellow/gold colour and a typical sweet and delicate taste. Available in dark bottles/anti-refill to preserve its organoleptic qualities over time and in handy storage tins.
