Wines
An indigenous grape variety, cultivated in vineyards at an altitude of 400 meters above sea level with a southeast exposure, benefits from strong daytime sunshine and equally high nightly temperature variations. This, coupled with the limestone and rocky soils, contributes to developing the unique aromas and flavors of a wine unlike any other. Pigato Doc Riviera Ligure di Ponente from Frantoio San Martino takes you on a journey to discover the wonderful summer and autumnal scents of our hills: medicinal herbs, Mediterranean scrubland, and maritime pine.
Hand-picked grapes in the second half of September undergo partial gentle pressing and partial maceration on the skins, then vinified in stainless steel tanks at controlled temperatures. Maturation for 6 months in steel and further refinement for 1 month in the bottle. In the first 2 years from harvest, fresh and iodized scents prevail, gradually evolving into balsamic and incense notes after 5-6 years. Suitable for aging.

Finish: Savory and fresh, evident rocky and mineral texture, honey and toasted almonds; in the long term, it develops intense aromas of incense and aromatic herbs
Pairings: Typical Ligurian fish-based dishes, brandacujun, trofie al pesto, Ligurian-style rabbit, and white meats.
